It is tropical smoothie time! Adult style!
A few weekends ago we had a fun little barbeque shindig at our house because we could. I love those impromptu type of meet ups. Well this time, my mom brought along a little toy. She had been doing some work with kids after school and teaching lessons on healthy eating. One of her lessons was on smoothies and how you can add a ton of healthy fruit with yogurt and make a delicious smoothie.
The topping on the cake on this one though was the bike. What does a bike have to do with smoothies? Well this particular bike has been retrofitted to hold a blender on the back of it. Essentially, you pedal and instead of the wheel propelling you forward, the wheel turns the blender blades. Let me tell you… easily the funnest way to make a smoothie, and burn a few calories too! Thank you Sydney for being my model on the bike!
So we spent the afternoon finding interesting fruit combinations that we could pedal into a smoothie to taste. We came up with a bunch of interesting ones, but towards the end of the day we realized we were ignoring the whole concept of adult only smoothies. What were we thinking?
I immediately solved the problem with tropical fruit and equally tropical rum. Keeping it simple with mango and banana, I let the coconut milk give that hint of flavor that you want with a tropical drink. I suppose the rum I used gave some of that coconut flavor too. It was a dreamy, creamy concoction which immediately made you feel as though you were in a beach in the Carribean.
I don’t know about the Carribean, but I’ll just drink this pretty much at any beach. Even though it’s supposed to pour rain in Texas the day we are at the beach, I could still drink this and imagine it’s warm and sunny and my very uncommonly white California legs are getting a tan.
I think this smoothie for me represents a shift from Spring to Summer. We just actually moved into summer and California celebrated with a week long heat wave topping over a hundred degrees in some areas. I honestly can’t think of a better way to celebrate the beginning of summer than to sip on this smoothie on a Caribbean beach…. or my back patio.
- ½ frozen banana
- ½ cup mango pieces
- 1 tablespoon plain yogurt
- 2 tablespoons tropical rum
- 5 tablespoons coconut milk
- Combine all ingredients in a blender and blend until smooth.
