My absolutely favorite cucumber recipe is a simple Asian inspired salad. It’s so refreshing!
Sometimes, I just want a snack that is easy, cool and healthy. I cannot even tell you how many times I have made a cucumber salad, let it sit and “pickle” for a day, then ate the entire bowl in one sitting. As I mentioned, I used to hate cucumbers and this was one of the recipes that turned it around for my taste buds.
I make this different almost every time, but the base is the same. Sometimes it’s only cucumbers, sometimes its cucumbers and radishes and sometimes I will go all out, like I’m showing off today. Any veggie that can hold up well to pickling would work – which is most, but the best mix includes cucumber, carrot, jicama or radish, onion and bell pepper. I added cilantro and peanuts to make it a great little side dish.
This particular recipe came out like an Asian coleslaw perfect to top sandwiches, rice, barbecue or just eat on its own. As yummy as it is to eat immediately, I promise it will be ten times better the next day. So just a bit of planning ahead.
Speaking of planning ahead, I am sad to say that this will be by last post for about a month. I am very excited to be working part time at our county fair this year and trying to do both that and this blog was a bit much. The big plus is that I have been contemplating some new ideas for One Fine Shindig in the future which I think you are really going to like, so I hope to have that ready to go when we come back.

While you are thinking of veggies going bad, pull out your “pickling” ones and make this slaw. You won’t regret it.
- ¼ large white onion, julienned
- ½ yellow or red bell pepper, julienned
- 2 snack cucumbers, seeded and julienned
- 1 carrot, julienned
- ½ jicama, julienned
- ½ bunch cilantro, chopped
- ½ cup peanuts, chopped
- 2 limes, juiced
- 3 tablespoons honey
- 4 tablespoons rice wine vinegar
- 1 teaspoon garlic chili paste
- Salt, to taste
- In a mixing bowl toss together the onion, bell pepper, cucumber, carrot, jicama, cilantro and peanuts. in a small bowl whisk together the lime juice, honey, vinegar, and chili paste until combined. Pour over the veggies and mix thoroughly. Place in a covered container in the fridge at least overnight to marinade, then enjoy!
