I love the Orange County Fair, and I think I have gone literally every year since I was born. I know there are die-hards telling me that other fairs are better, but this is the one I grew up with, the one I turned in my craft projects to, and the one I go to every year. So, it’s still awesome in my eyes.

I thought Friday was an appropriate day to post this recipe since it was a Friday where I first tasted a meatball slider at the the Taste of the Fair event. Never heard of it? You are in for a treat. The OC Fair puts on a Taste of the Fair one day a week where you can get a small portion of a popular dish for only $2! Many of the food vendors offer different items so you really have to pick which ones you want because otherwise you will get full really fast.

I have a solution though. The first year the fair did this, my friend Chandra and I concocted a plan. We took our girls, bought one item from each of the vendors and we shared the one item. (We aren’t that worried about germs after knowing each other for almost 20 years.) We were able to try almost everything we wanted and walked away full, but not grossly stuffed.

It was on that first Taste of the Fair – which was on a Friday afternoon – that we tried our first meatball slider. In a nutshell, it’s really a simple concept. Meatball, sauce, cheese on a bun. Sheer brilliance. And so simple, especially for a big crowd. I can see a huge slow cooker full of meatballs keeping warm and as everyone is getting hungry, they can grab a bun, top with a meatball and shredded cheese. A do it yourself meatball sandwich!

I’ll even give you cheat – I won’t tell anyone if you don’t. You can use frozen meatballs to make a huge batch of this dish. Honestly I don’t like frozen as much as homemade but there are plenty of times where I understand if you need to go that route. Just don’t tell me…..

I figure if I get inspiration on dishes from the fair, I wonder what will catch my eye this year. I don’t think I’ll be trying a deep fried twinkie or chicken sandwich on a donut, but there may be something else that could be made very easily at home. What are your favorite fair foods?

Ingredients
  1. 1 pound ground beef
  2. 1 egg
  3. 1 tablespoons bread crumbs
  4. 1 teaspoon garlic powder
  5. ½ teaspoon salt
  6. ½ teaspoon pepper
  7. 1 teaspoon italian seasoning
  8. 12 ounces jar marinara sauce
  9. 12 slider buns
  10. Shredded mozzarella cheese
Instructions
  1. Preheat oven to 400 degrees. Mix together ground beef, egg, bread crumbs, garlic powder, salt, pepper and Italian seasoning until just mixed. Divide meat and roll into golf ball sized balls and place into a baking dish. Bake for 15 minutes or until no longer pink in the middle.
  2. Warm marinara sauce and stir meatballs gently to coat. Pile on slider buns and top with shredded cheese.
