I am so excited about pumpkins!! The flavor, the color – I love orange, it’s such a bright, happy, unique color. Not to mention pumpkins are synonymous with Halloween, which is one of my favorite holidays!
I love the excuse to dress up and get together with friends and family to just be silly. My daughter Juliet still trick or treats at 14, but she is way beyond even wanting her mom to come with her. Thankfully we live in a great neighborhood with a bunch of her friends so she can trick or treat with them to her hearts content. So I am free to hand out candy and enjoy the evening with whoever stops by.
Anyways onto this wonderfully squashy week. I knew I had to do some sort of drink with pumpkin, and oh man, did I find it!!! This Pumpkin Hot Buttered Rum is the perfect end to the day on a chilly evening.
Now certainly you cannot consider the caloric intake when you make this drink because they just don’t exist. It’s too delicious for calories…. Yes, I think that’s the best way to deal with the less than healthy benefits here.
I contemplated many different types of drinks, but I settled on this one because it’s so easy! You can make the butter mixture anytime then have it waiting for you in the fridge. This would even be ideal for a party – like a Halloween party – where you want to serve a fun hot cocktail but don’t want to go through the hassle of playing bartender all evening.
You can even serve this as a virgin drink! All those yummy spices and pumpkin flavor is in the butter so if you just use hot water, it will still have all those fall flavors you are craving.
So, it’s as simple as pumpkin spiced butter + rum + boiling water then stir. I stuck a cinnamon stick in mine. For some reason it makes me feel like I’m at a fancy restaurant.
So if you excuse me I think I’ll go sip my way into this week of pumpkins, I hope you’ll join me!
- ½ cup butter, room temperature
- 3 tablespoons pumpkin puree
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- ½ teaspoon ground cloves
- ½ cup brown sugar
- Mix all ingredients until well combined. Form into a roll and roll up in wax paper. Refrigerate at least 2 hours or until firm.
- Put 1/8 of the butter mixture into the bottom of a mug. Pour 2 ounces of spiced rum and 2 ounces of boiling water over the top. Stir until melted. Enjoy.
- To make a virgin drink - omit the rum.
