I have the easiest appetizer for you in the form of these yummy salami wrapped blue cheese stuffed dates.
I cannot tell you how many times I have been asked to bring a snack or appetizer, then I am super busy and completely forget until the last second. Buying already made stuff from the store is not really my style. I would much rather come up with a fast easy appetizer solution to bring over.
So, why blue cheese? Well, I love blue cheese and have been wanting to cover the topic for awhile. The problem is that blue cheese itself it pretty expensive and I generally only buy it when I really need it. When I priced out what I wanted to make, I was probably going to spend over $15 on just blue cheese crumbles! No thank you, I figured I would wait until another time when it was more reasonable.
Literally two days after I had dumped the blue cheese idea, my siblings and I set up a awesome gourmet burger bar for Mothers Day. My brother was in charge of a bunch of the toppings and among the ones he brought over was an industrial sized tub of blue cheese. Now I don’t know about you, but even 10 burgers won’t use a pound and a half of blue cheese crumbles.
Of course the question now is, what do you do with a pound and half of leftover blue cheese? Well I never delete my ideas, I just save them for when I have those ingredients. My brother and his fiancee happily gifted me with the worlds largest tub of blue cheese, and I went to work.
Bradley insisted I do these appetizers. I had made them for a Super Bowl party a couple years ago and he couldn’t stop raving about them. It was his one insistence that I share this recipe with the world. They are the perfect pop in your mouth types of snacks. Honestly they sound slightly weird – the combination of ingredients, salami, blue cheese and dates – are not traditional ingredients together. I promise you, they actually work really well together. There is a salty, sweet flavor that pairs with the blue cheese to give it a whole other flavor.
You are going to be getting three amazing blue cheese recipes this week. The ones I created really dwindled my massive blue cheese supply, however I still have quite a bit. I think I might have to make all my recipes twice or three times over to use it all!
- 20 pieces salami
- 20 dates
- ½ cup blue cheese crumbles
- Slice open the dates but not all the way through. Remove any pits you find. Stuff a few crumbles of blue cheese into the cavity of each date. Wrap a slice of salami around the date and secure with a toothpick. Continue with the rest of the ingredients.
- Right before serving place all pieces in the oven at 250 degrees for about 5 minutes or in the microwave for about 30 seconds just until warmed through.
