One of my favorite carby indulgences is strawberry bread.
There is actually this buffet place in our area that has different themes every month. One of those months each year they offer a fresh strawberry muffin. Oh. My God. Seriously I will pay the buffet price and just eat dozens of strawberry muffins. It makes me a happy girl. Thank goodness it’s only one month a year…
I am not sure what it is specifically about strawberry bread or muffins that gets me so excited. I mean, what’s so different about blueberry muffins? No idea, but while I like blueberry options, it just doesn’t get me quite as excited as strawberry. I promise you won’t regret it if you give it a try, plus you will probably agree with my strawberries are better than blueberries theory.
This recipe is special anyways. While I love a simple strawberry bread, I wanted to give it a little extra something and what is better than almonds. I helped it along two ways – inside and out. The inside of this bread is moist, sweet and holds a hint of almond flavor from almond extract. It really just calls for a slathering of butter across the top when it’s warm to let it melt all the way through. – Guilty pleasure right there. – The crust is that perfect balance between crispy and chewy, but the toasted almonds really bring that delicate crunch to the bread.
We are in full count down wedding mode as my brother gets ready to marry his lovely fiancée this weekend!!! – he’s the first of our siblings to tie the knot. I feel like I’m in an endless swirl of bachelorette parties, bridal showers, guests coming to town and cheesy wedding chick flicks. (Tonight it’s The Wedding Planner and My Big Fat Greek Wedding!) Craziness but so much fun!
I finally found a dress too. Whew, who knew shopping for one dress would be so stressful! I finally found myself in a mall in Texas where Bradley actually pulled a great one off the rack and told me to try it on. I guess he does have some eye for fashion – I’ll have to take him shopping with me all the time! (He will roll his eyes as he reads that line, I’m sure.)
Since we have family coming to town, we figured one of the best ways to meet and greet the bride – some for the first time – was over a little bubbly. Champagne helps smooth the way to a good time, don’t you think? Our Brunch & Bubbly Bridal Shower is going to feature a mimosa bar, homemade breads, casseroles, even a doughnut cake… Look it up! But, I know that this strawberry bread is going to fit right in and very taste summery and fresh!
- 2 cups strawberries, chopped
- 2 tablespoons sugar
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 cups sugar
- 3 eggs
- 1 cup canola oil
- 1 teaspoon almond extract
- Sliced almonds
- In a large mixing bowl, toss the strawberries and 2 tablespoons sugar. Let sit about an hour to bring out all the juices.
- Preheat oven to 350 degrees. Spray two 9x5x3 inch loaf pans with non-stick cooking spray.
- On top of the strawberries add the flour, baking powder, salt, sugar, eggs, oil, and almond extract. Mix thoroughly. Divide batter between the two loaf pans then sprinkle the top with sliced almonds.
- Bake 45-60 minutes until a toothpick inserted comes out clean.
