Summer brings up the concept that grilling is a viable way of cooking all over the country.
We just bought a new grill and I have tried to come up with every possible way to grill proteins, fruit, vegetables and even bread. Now, keep in mind grilling does not always mean a steak with perfect grill marks. It may also mean heating up a skillet of amazing queso so everyone can dip and munch as the meat sizzles away. Try my Mexican Onion Queso and everyone won’t be able to stay away from your grill!
Like I said, grilling can be a bit outside the box. But a salad? Oh yes, this Grilled Potato Salad with Almond Basil Chimichurri from Half Baked Harvest looks like such a yummy salad. Not to mention it’s a great side to have on hand for any vegetarian friends. It easily could provide a filling meal that mimics the meat the rest of the carnivores will be enjoying.
Speaking of grilled vegetables, one of the best are brussels sprouts. They get this caramelized flavor on the edges and the outside that you can’t get unless you roast or grill them. To make sure they don’t fall through the grates, I skewer them and grill several at a time. This recipe by Alton Brown is simple but successful in giving it flavor without over powering the vegetables.
Of course where would you be without dessert? One of my favorite summer desserts is grilled fruit, especially peaches or nectarines. I would even go with apricots. These Grilled Vanilla Bean Mascarpone Peaches with Salted Bourbon Caramel from Steele House Kitchen, literally have all my favorites. The grilled fruit is a perfect vehicle for sweet mascarpone cheese and salted caramel. If you have never tried grilled peaches, you won’t regret it.
Finally, you can’t have any type of grilling party without fun drinks. I know these aren’t grilled but I’m going to give you a challenge. Make one of my Refreshing Pineapple Cocktails Two Ways but throw pieces of pineapple on the grill first. Then add to the drink or even use it as a garnish to add another flavor in the drink for everyone. Cheers!
